Crumbed Schnitzel with Creamy Mushroom Sauce

INGREDIENTS

50g butter
1 brown onion, finely chopped
1 garlic clove crushed
200g button mushrooms, thinly sliced
125ml dry white wine
300ml pure cream
1 tbs finely chopped fresh thyme
4 crumbed schnitzel
Oil for frying
Salt and pepper to season

For the creamy mushroom sauce, melt the butter in a fry pan over a medium heat. Add onion, garlic and thyme and cook, stirring occasionally, for 5 mins or until the onion has softened. Stir in the mushrooms and cook for a further 5 minutes. Add in wine and cream, increase the heat and bring to the boil, then simmer for a further 10. Season and keep warm while cooking the schnitzel.
